This is an easy and quick pattern. The pom-pom fringe is the most labor-intensive part but can be left off if you'd prefer. I particularly like this pattern because it is easy for beginners, and it makes a great gift.
The Pattern:
What you need:
Hook: H/8 - 5.00 mm
Yarn: 4 - 6 skeins of worsted weight yarn for squares and 2 contrasting skeins of worsted weight yarn for stitching squares together and making the fringe.
Stitch marker
Abbreviations:
Rnd - Round
ch - Chain
dc - Double crochet
st - Stitch
slst - Slipstitch
sc - Single crochet
dc5tog - Double crochet 5 together (instructions included)
sk - Skip
yo - Yarn over
Granny Squares:
Make 45 granny squares (More if you want a bigger blanket). I use a traditional granny square for this blanket, but you can really use any granny square pattern you like.
Here's what I use:
Start: ch 4 and slst into the 4th chain from the hook to make a circle.

Rnd 1: ch 3 (counts as first dc here and throughout), 2 dc into the circle, ch 2, 3 dc into circle, ch 2, 3 dc into circle, ch 2, 3 dc into circle, ch 2, slst into top of ch 3

Rnd 2: ch 3, 2 dc into ch 2 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in chain 2 space, ch 2, slst into top of ch 3

Rnd 3: ch 3, 2 dc into ch 2 space, ch 1, 3 dc into ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, 3 dc in ch 2 space, ch 2, slst into top of ch 3

Rnd 4: ch 3, 2 dc in ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 2 space, ch 2, slst in top of ch 3

Rnd 5: ch 3, 2 dc in ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, 3 dc in same ch 2 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 1 space, ch 1, 3 dc in ch 2 space, ch 2, slst in top of ch 3

Joining your Squares:
There are many ways to join your granny squares. I like to use a simple single crochet method, but you can use any method you like. Since these squares are joined in a zig zag, it's easiest to lay them out when joining the first two rows.

Make 2 sc in ch 2 space, 1 sc in the top of every dc, and 1 sc in ch 1 space. Keep stitches kind of loose so you don't pucker your work. Make 9 rows of 5 squares each.

Border:
Join yarn anywhere on edge of blanket. Use a stitch marker to keep track of rounds.
Rnd 1: sc in every st all the way around (i.e. 1 sc in the top of every dc, 1 sc in every ch 1 space, and 1 sc in every inside corner ch 2 space), making 3 sc in each outside corner ch 2 space.

Rnd 2 - 3: sc in every st, skipping 1 st in the elbow of inside corners, and making 2 sc in each st made in outside corner (i.e. 2 sc in each of the 3 sc made in rnd 1 and 2 in each of the 6 made in rnd 2).

Pom-Pom Fringe:
When you've made 3 complete rounds of sc, you can begin the pom-pom fringe.
ch 3, dc5tog* in 2nd ch from hook, slst in same space, ch 2, sk st, slst in next st, rep from beginning until you have gone all the way around the blanket. Break yarn. Weave in ends. Et voila!
*yo, insert hook, pull up a loop, yo, pull through 2, rep from beginning until you have 6 loops on your hook, then yo and pull through all 6 loops
